True to form provincial style single vineyard Rosé made from Cabernet Franc grown in the Macedon Ranges. 20-year-old vines grown in the warmer North- eastern quadrant of the region. Lean crops and small bunches thanks to granitic sand and our famous cold nights.
Whole bunch cold pressed with minimal skins handling and directly to seasoned barrels. Wild fermented under temperature control to complete dryness, then matured in the same barrels for 4 months. Hands off winemaking leads to purity and complexity in the bottle.
Aromatics
Leafy, baked pear and apple, short bread, peony.
Palate
Bright, crisp, apricot, lime, white pepper, lingering acid, satin finish.
